Recipe: Spicy Shrimp Tacos with Cabbage Slaw

Ingredients:
- 6 small corn tortillas
- 12 large shrimp, peeled and deveined
- 2 cups shredded cabbage (mix of red and green cabbage)
- 1 small carrot, grated
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro and lime wedges for garnish (optional)
Instructions:
- In a small bowl, combine the mayonnaise, lime juice, and a pinch of salt and pepper. Toss with the shredded cabbage and grated carrot to make the slaw. Set aside.
- Mix the chili powder, cumin, garlic powder, salt, and pepper in another bowl. Coat the shrimp with this spice mixture.
- Heat the oil in a pan over medium-high heat. Add the seasoned shrimp and cook for about 2 minutes on each side, or until they are pink and opaque.
- While the shrimp are cooking, warm the tortillas in the microwave or on another pan for about 30 seconds to 1 minute.
- Assemble the tacos: place a portion of the cabbage slaw on each tortilla, top with two shrimps, and garnish with fresh cilantro and a squeeze of lime juice, if desired.
