Recipe: Spicy Shrimp Tacos with Cabbage Slaw

Ingredients:

  • 6 small corn tortillas
  • 12 large shrimp, peeled and deveined
  • 2 cups shredded cabbage (mix of red and green cabbage)
  • 1 small carrot, grated
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro and lime wedges for garnish (optional)

Instructions:

  1. In a small bowl, combine the mayonnaise, lime juice, and a pinch of salt and pepper. Toss with the shredded cabbage and grated carrot to make the slaw. Set aside.
  2. Mix the chili powder, cumin, garlic powder, salt, and pepper in another bowl. Coat the shrimp with this spice mixture.
  3. Heat the oil in a pan over medium-high heat. Add the seasoned shrimp and cook for about 2 minutes on each side, or until they are pink and opaque.
  4. While the shrimp are cooking, warm the tortillas in the microwave or on another pan for about 30 seconds to 1 minute.
  5. Assemble the tacos: place a portion of the cabbage slaw on each tortilla, top with two shrimps, and garnish with fresh cilantro and a squeeze of lime juice, if desired.
