Recipe: Avocado and Tomato Breakfast Sandwich

Ingredients:

  • 2 slices of whole grain bread
  • 1/2 ripe avocado
  • 1 small tomato, sliced
  • 1 large egg
  • Salt and pepper to taste
  • A drizzle of olive oil or a small pat of butter for cooking

Instructions:

  1. Toast the bread slices to your desired level of crispiness.
  2. While the bread is toasting, heat the olive oil or butter in a non-stick pan over medium heat.
  3. Crack the egg into the pan and cook to your liking (either sunny side up or flipped for over-easy).
  4. Mash the avocado and spread it evenly on one slice of the toasted bread. Season with a pinch of salt and pepper.
  5. Place the cooked egg on top of the mashed avocado.
  6. Add the tomato slices on top of the egg.
  7. Cover with the second slice of toast to form a sandwich.
