Recipe: Garlic Shrimp Pasta with Cherry Tomatoes

Ingredients:
- 8 oz spaghetti or your choice of pasta
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup olive oil, plus extra for cooking
- 1/4 cup fresh parsley, chopped
- 1 lemon (zest and juice)
- Red pepper flakes (to taste)
- Salt and pepper to taste
- Grated Parmesan cheese (optional for serving)
Instructions:
- Cook the pasta in a large pot of salted boiling water according to package instructions, about 8-10 minutes.
- While the pasta is cooking, heat a splash of olive oil in a large skillet over medium-high heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- In the same skillet, add a bit more olive oil and the minced garlic. Cook for about 1 minute until fragrant.
- Add the cherry tomatoes and cook for another 2 minutes until they start to soften.
- Drain the pasta and add it to the skillet with the tomatoes. Add the cooked shrimp, olive oil, lemon zest, lemon juice, parsley, and red pepper flakes. Toss everything together.
- Serve the pasta with a sprinkle of grated Parmesan cheese if desired.
