Recipe: Garlic Shrimp Pasta with Cherry Tomatoes

Ingredients:

  • 8 oz spaghetti or your choice of pasta
  • 1 lb shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup olive oil, plus extra for cooking
  • 1/4 cup fresh parsley, chopped
  • 1 lemon (zest and juice)
  • Red pepper flakes (to taste)
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional for serving)

Instructions:

  1. Cook the pasta in a large pot of salted boiling water according to package instructions, about 8-10 minutes.
  2. While the pasta is cooking, heat a splash of olive oil in a large skillet over medium-high heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add a bit more olive oil and the minced garlic. Cook for about 1 minute until fragrant.
  4. Add the cherry tomatoes and cook for another 2 minutes until they start to soften.
  5. Drain the pasta and add it to the skillet with the tomatoes. Add the cooked shrimp, olive oil, lemon zest, lemon juice, parsley, and red pepper flakes. Toss everything together.
  6. Serve the pasta with a sprinkle of grated Parmesan cheese if desired.
