Recipe: Scrambled Egg and Spinach Wrap

Ingredients:

  • 1 large egg
  • A handful of fresh spinach, roughly chopped
  • 1 whole wheat tortilla

Instructions:

  1. Beat the egg in a microwave-safe bowl. Stir in the chopped spinach, and season with salt and pepper.
  2. Microwave the egg and spinach mixture for about 1 minute and 30 seconds, or until the egg is fully cooked. Stir halfway through cooking.
  3. Warm the tortilla in the microwave for about 15 seconds.
  4. Place the scrambled egg and spinach mixture onto the center of the tortilla. Sprinkle with cheese, if using.
  5. Fold the tortilla to form a wrap.
